    Prepare the Chicken

    Slice the chicken breast into thin strips and season with salt and black pepper.

    Sauté the Onion

    In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.

    Cook the Chicken

    Increase the heat to medium-high. Add the chicken strips to the skillet and cook until golden brown and cooked through, about 5-7 minutes.

    Flambé with Sherry

    Carefully add the sherry to the skillet, allowing it to flambé. Use a long lighter or match to ignite the sherry, and let the flames subside.

    Add Cashews and Soy Sauce

    Stir in the soy sauce, diced New Mexican red chile, and cashews. Cook for another 2-3 minutes until heated through.

    Remove from heat and serve hot, garnished with additional cashews if desired.
