Gumbo Preparation

Make the Roux
In a large pot, heat the vegetable oil over medium heat. Stir in the flour and cook, stirring constantly, until the mixture is dark brown (about 15-20 minutes).

Add Broth and Seasonings
Slowly add the chicken broth, stirring constantly. Then add the diced tomatoes, Cajun seasoning, bay leaves, salt, and black pepper. Bring to a boil.

Simmer
Reduce the heat and let the gumbo simmer for about 30 minutes, stirring occasionally.

Add Seafood
Stir in the shrimp, crab meat, and crawfish. Cook for an additional 10-15 minutes, or until the shrimp are pink and the seafood is heated through.

Prepare Rice
While the gumbo is simmering, prepare the jambalaya rice according to package instructions.

Serve
Serve the gumbo hot over a scoop of jambalaya rice and garnish with chopped green onions. Serve with slices of focaccia bread on the side.
