    Prepare the Lobster

    In a small saucepan, melt 1 tablespoon of butter over medium heat. Add lobster meat and sauté for 3-4 minutes until heated through. Pour in the champagne and cook until slightly reduced. Remove from heat and set aside.

    Make the Omelette

    In a bowl, whisk together the eggs, salt, and pepper. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted, pour in the egg mixture. Cook for about 2-3 minutes until the edges start to set.

    Add Fillings

    Dot the cream cheese evenly over the omelette and sprinkle with chopped green onions and diced cherry tomatoes. Allow to cook for another 2 minutes until the eggs are fully set.

    Finish the Omelette

    Fold the omelette in half and slide it onto a plate. Top with the sautéed lobster and Brie cheese, allowing the Brie to melt slightly.

    Toast the English Muffin

    While the omelette is cooking, toast the English muffin until golden brown and serve alongside.
