Prepare the Beans
In a small saucepan, heat the black beans over medium heat until warmed through. Stir in the green chilies and chopped onion, cooking until the onion is translucent.

Fry the Tortillas
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Fry each tortilla for about 1-2 minutes on each side until crispy and golden. Remove and set on paper towels to drain excess oil.

Cook the Eggs
In the same skillet, add another tablespoon of olive oil if needed. Crack the eggs into the skillet and cook for about 3-4 minutes, or until the whites are set but the yolks are still runny. For over-medium, cook an additional minute.

Serve
Serve immediately with sides of salsa and sour cream for drizzling on top.
