Scrambled eggs filled with country ham, onions and tomatoes over Cheddar Jack cheese grits. Topped with country sausage gravy. Served with baked bacon and an over-sized biscuit.

Cook the Bacon
Preheat the oven to 400°F (200°C). Place bacon slices on a baking sheet and bake for 15-20 minutes or until crispy. Remove and let drain on paper towels.

Make the Scrambled Eggs
In a skillet, melt 1 tablespoon of butter over medium heat. Add diced onions and cook until translucent. Add diced country ham and tomatoes, cooking until heated through. Whisk together 6 eggs, salt, and pepper, then pour into the skillet. Scramble until cooked to your liking.

Assemble the Bowl
In a serving bowl, layer the cheesy grits, followed by the scrambled egg mixture. Top with sausage gravy. Serve with crispy bacon and warm biscuits on the side.
