Preparation

1. Prepare the Grits

In a saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and salt. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in the Cheddar Jack cheese until melted.

2. Cook the Bacon

Preheat the oven to 400°F (200°C). Place bacon slices on a baking sheet and bake for 15-20 minutes or until crispy. Remove and let drain on paper towels.

3. Make the Scrambled Eggs

In a skillet, melt 1 tablespoon of butter over medium heat. Add diced onions and cook until translucent. Add diced country ham and tomatoes, cooking until heated through. Whisk together 6 eggs, salt, and pepper, then pour into the skillet. Scramble until cooked to your liking.

4. Prepare the Sausage Gravy

In another skillet, cook the country sausage over medium heat until browned. Stir in 1 cup of milk and bring to a simmer. Add salt and pepper to taste, and cook until slightly thickened.

5. Assemble the Bowl

In a serving bowl, layer the cheesy grits, followed by the scrambled egg mixture. Top with sausage gravy. Serve with crispy bacon and warm biscuits on the side.
