Prepare the Bacon
Preheat your oven to 400°F (200°C). Place the bacon strips on a baking sheet lined with parchment paper and bake for 15-20 minutes or until crispy. Remove from the oven and set aside.

Make the Patties
In a bowl, season the ground beef with salt and black pepper. Divide the beef into two equal portions and shape them into patties, about 3/4 inch thick.

Toast the Buns
While the patties are cooking, cut the brioche buns in half and lightly toast them in a separate pan until golden brown.

Assemble the Burger
On the bottom half of each brioche bun, layer the lettuce, tomato slices, cooked beef patty with melted cheese, crispy bacon, and red onion slices. Top with pickles and cover with the top half of the bun.

Serve
Serve the burgers with a side of fresh country potatoes, seasoned as desired.
