Prepare the Batter
In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt. In another bowl, mix the wet ingredients: buttermilk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be slightly lumpy.

Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.

Serve
Remove pancakes from the skillet and keep warm. Serve with maple syrup, fresh fruit, or your desired toppings.
