Biscuit Beignets

Method

Preparation

  1. 1

    Make the Biscuit Dough

In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and granulated sugar. Mix well. In a separate bowl, whisk together the buttermilk, melted butter, and egg until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

  2. 2

    Chill the Dough

Cover the dough with plastic wrap and refrigerate for about 30 minutes to make it easier to handle.

  3. 3

    Prepare the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature for frying.

  4. 4

    Fry the Beignets

Once the oil is hot, turn the dough out onto a floured surface. Pat it down to about ½ inch thick. Cut into squares or circles using a biscuit cutter or knife. Carefully drop a few pieces of dough into the hot oil, being cautious not to overcrowd the pot. Fry until golden brown, about 2-3 minutes per side.

  5. 5

    Drain and Dust

Use a slotted spoon to remove the beignets from the oil and transfer them to a plate lined with paper towels to drain excess oil. While still warm, dust generously with powdered sugar.

  6. 6

    Serve

Serve the beignets warm with honey marmalade on the side for dipping.
