Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Whisk continuously until the mixture thickens. Slowly drizzle in melted butter while whisking until fully combined. Season with salt and cayenne pepper. Keep warm.

Cook the Ham
In a separate skillet, add the ham slices and cook until heated through and slightly crispy, about 2-3 minutes per side.

Fry the Eggs
In a non-stick skillet, add a small amount of oil or butter and heat over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

Assemble the Burger
Toast the brioche buns if desired. On the bottom half of each bun, place a beef patty, followed by a slice of ham, a fried egg, a generous spoonful of hollandaise sauce, and a sprinkle of chopped green onions. Top with the other half of the bun and serve immediately.
