Salad Preparation
1. Prepare the Radicchios
Remove any damaged outer leaves from the Tardivo and Castelfranco radicchios. Rinse them under cold water and pat dry with a clean kitchen towel.

Cut the Tardivo radicchio into thin strips and the Castelfranco into wedges. Place both types of radicchio in a large salad bowl.
