Grilled Onion Butter

Pickled Shallot Vinaigrette

    Prepare the Steak

    Season the hanger steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Cook the Steak

    Preheat a grill or grill pan over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, depending on thickness. Remove from heat and let it rest for 5 minutes before slicing.

Grilled Onion Butter

    Make the Onion Butter

    In a skillet over medium heat, melt the butter. Add the finely chopped onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and thyme, cooking for an additional minute. Remove from heat and set aside.

Pickled Shallot Vinaigrette

    Pickle the Shallots

    In a bowl, combine the sliced shallots and red wine vinegar. Let the shallots soak for at least 30 minutes.

    Make the Vinaigrette

    In a separate bowl, whisk together the pickled shallots (with vinegar), olive oil, Dijon mustard, salt, and black pepper until well combined.

Frites

    Prepare the Frites

    Rinse the cut potatoes in cold water and pat them dry with a towel. Heat the vegetable oil in a deep pot or fryer to 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches until golden brown and crispy, about 5-6 minutes per batch. Remove and drain on paper towels. Season with salt while still hot.

Salad

    Assemble the Salad

    In a large serving bowl, toss the torn Bibb lettuce with the pickled shallot vinaigrette until lightly coated.
