Sear the Pork
Once the oil is hot, sear the pork tenderloin on all sides until golden brown (about 3-4 minutes per side).

Roast the Pork
Transfer the seared tenderloin to the oven and roast for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove from the oven and let it rest for 5 minutes.

Cook the Beans
Bring the mixture to a boil, then reduce the heat to low and simmer for about 1-1.5 hours, or until the beans are tender. Add more water if necessary to keep them submerged.
Charred Chicory

Char the Chicory
Place the chicory cut-side down on a hot grill or grill pan. Grill for about 5-7 minutes, or until charred and tender.
Chipotle Vinaigrette

Make the Vinaigrette
In a bowl, whisk together the chipotle peppers, olive oil, red wine vinegar, honey, and salt until well combined. Adjust seasoning to taste.
