Bourbon Production

    Mashing

    Combine 75% corn, 13% rye, and 12% malted barley in a large mash tun. Add 10 gallons of hot water (around 160°F) to the grains and stir thoroughly.

    Fermentation

    Allow the mash to cool to about 80°F before adding the yeast. Cover the mash tun and let it ferment for 3-5 days, until bubbling ceases.

    Distillation

    Transfer the fermented mash into a still and heat it. Collect the distillate, ensuring to separate the heads and tails, keeping the heart of the distillate.

Aging Process

    Barrel Aging

    Pour the distilled bourbon into a new charred oak barrel. Seal the barrel and store it in a climate-controlled warehouse. Age the bourbon for at least 4 years.

    Bottling

    After aging, carefully empty the barrel into a filtration system to remove any solids. Bottle the bourbon at 100 proof (50% alcohol).
