Main Ingredients

Method

Preparation

  1. 1

    Marinate the Skate Wing

In a shallow dish, combine the olive oil, minced garlic, chopped shallots, lemon juice (from half the lemon), salt, and black pepper. Place the skate wings in the marinade and let them sit for at least 30 minutes to absorb the flavors.

  2. 2

    Prepare the Grill

Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Prepare the Capers

Rinse the capers under cold water, then pat dry with a paper towel. This will help reduce their saltiness.

Cooking

  1. 4

    Grill the Skate Wing

Once the grill is ready, remove the skate wings from the marinade, allowing excess marinade to drip off. Place the skate wings on the grill and cook for about 3-4 minutes on each side, or until the fish is opaque and easily flakes with a fork.

  2. 5

    Finish with Capers and Lemon

During the last minute of grilling, sprinkle the rinsed capers over the skate wings. Squeeze the remaining lemon juice over the top for added flavor.

Serving

  1. 6

    Plate and Serve

Remove the skate wings from the grill and let them rest for a minute. Serve warm with extra lemon wedges on the side for garnish.
