    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and scrub the Russet potatoes thoroughly. Cut them into even sticks, approximately 1/4 to 1/2 inch thick.

    Season the Fries

    In a large mixing bowl, combine the potato sticks with olive oil, salt, black pepper, and paprika. Toss until the fries are evenly coated.

    Roast the Fries

    Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Roast the Garlic

    While the fries are roasting, take the garlic cloves, peel them and wrap them in aluminum foil. Drizzle with a little olive oil and roast them in the oven for 20 minutes until soft and fragrant.

    Prepare the Aioli

    In a mixing bowl, combine the roasted garlic (squeeze out of the skins), mayonnaise, lemon juice, olive oil, salt, and black pepper. Whisk until smooth and creamy.

    Serve

    Once the fries are done roasting, remove them from the oven and let cool slightly. Serve hot with the roasted garlic aioli on the side for dipping.
