Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure that it reaches the correct temperature for baking the lava cakes.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and lightly dust them with flour. Tap out any excess flour.

  3. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Mixing Ingredients

  1. 4

    Combine Sugar, Eggs, and Yolks

In a mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is thick and pale, about 2-3 minutes.

  2. 5

    Add Chocolate Mixture

Gradually pour the melted chocolate and butter mixture into the egg mixture, stirring constantly to combine.

  3. 6

    Fold in Dry Ingredients

Sift the all-purpose flour and add to the chocolate mixture along with the vanilla extract and a pinch of salt. Gently fold until just combined.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool for 1-2 minutes. Run a knife around the edges to loosen them.

Serving

  1. 10

    Invert and Serve

Carefully invert each ramekin onto a dessert plate. Serve immediately with 2 scoops of vanilla ice cream on each plate. Optionally, add fresh berries on the side.
