Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F). This ensures that your fondant cooks evenly.

  2. 2

    Prepare the Ramekins

Grease four ramekins with butter and dust them lightly with cocoa powder to prevent sticking.

Making the Fondant

  1. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (bain-marie) or in the microwave in short bursts, stirring until smooth.

  2. 4

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened.

  3. 5

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg and sugar mixture. Whisk until well combined.

  4. 6

    Add Flour and Flavors

Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold the mixture until just combined, being careful not to overmix.

  5. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Baking

  1. 8

    Bake the Fondants

Bake the ramekins in the preheated oven for about 10-12 minutes. The edges should be firm while the center remains soft and gooey.

  2. 9

    Cool and Serve

Allow the fondants to cool for 1 minute before carefully inverting them onto plates. They should come out easily if the ramekins were properly prepared.

Serving Suggestions

    Garnish

Dust the fondants with powdered sugar, and serve with fresh raspberries and mint leaves for a refreshing touch.
