Method

Preparation of Potato

    Boil the Potatoes

    Wash the potatoes thoroughly and place them in a large pot. Cover with water, add a pinch of salt, and bring to a boil. Reduce heat and let simmer for about 15-20 minutes or until the potatoes are tender when pierced with a fork.

    Cool and Peel

    Once cooked, drain the potatoes and let them cool slightly. When they are cool enough to handle, peel the skins off and set aside.

    Once cooled and peeled, cut each potato in half lengthwise.

Chive and Onion Cream Preparation

    Chop the Chives

    Finely chop the chives and set aside. This will be used in the cream mixture.

    Prepare the Onion

    Finely chop the small onion, ensuring that the pieces are small to blend well with the cream.

    Mix the Cream

    In a bowl, combine the sour cream, chopped chives, onion, lemon juice, salt, and black pepper. Mix well until all ingredients are incorporated.

Assembly

    Top the Potatoes

    Take each halved potato and spoon a generous amount of the chive and onion cream mixture on top of each half.

    Top each potato half with a dollop of caviar, making sure to distribute evenly.
