    Prepare the Bones

    Rinse the beef bones under cold water to remove any bone fragments or impurities. If using oxtails, cut them into pieces to ensure even cooking.

    Chop the Vegetables

    Peel and chop the carrots and onion into large chunks. Cut the celery stalks into thirds. Crush the garlic cloves with the flat side of a knife to release their flavor.

    Combine Ingredients

    In a large stockpot, add the rinsed beef bones, chopped carrots, celery, onion, crushed garlic, bay leaves, thyme, black peppercorns, and salt. Pour in 12 cups of water.

    Simmer the Broth

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for at least 6 hours. Skim off any foam or impurities that rise to the surface.

    Strain the Broth

    After simmering, remove the pot from heat. Carefully strain the broth through a fine-mesh strainer into another pot or bowl to remove the bones and vegetables. Discard solids.
