    Prepare the Smelts

    Rinse the fresh lake smelts under cold water and pat them dry with a paper towel. This helps to remove any excess moisture for a better frying result.

    Mix the Coating

    In a large bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and garlic powder. Mix well to ensure an even distribution of the seasonings.

    Dredge the Smelts

    Take each smelt and dredge it in the flour mixture, making sure to coat it thoroughly. Shake off any excess flour mixture and set aside on a plate.

    Heat the Oil

    In a large frying pan or deep skillet, heat the vegetable oil over medium-high heat. To check if the oil is hot enough, drop a small amount of the flour mixture into the oil; it should sizzle immediately.

    Fry the Smelts

    Carefully add the coated smelts to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

    Using a slotted spoon, remove the fried smelts from the oil and place them on a plate lined with paper towels to drain excess oil.
