SALADS/APPETIZERS

Method

SALADS/APPETIZERS

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels. This will help ensure a crispy coating.

  2. 2

    Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well until all dry ingredients are evenly incorporated.

  3. 3

    Bread the Calamari

Dredge each calamari ring in the flour mixture, ensuring they are well coated. Shake off any excess flour and set aside on a plate.

  4. 4

    Heat the Oil

In a large, deep skillet or frying pan, heat the olive oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small piece of bread into the oil; it should sizzle and turn golden brown.

  5. 5

    Fry the Calamari

Carefully add the breaded calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

  6. 6

    Mix with Vegetables

In a large mixing bowl, combine the fried calamari, hot pepper rings, sliced black olives, and roasted red peppers. Toss gently to mix all ingredients together.

  7. 7

    Serve

Transfer the calamari mixture to a serving platter. Garnish with chopped parsley and serve with lemon wedges on the side for squeezing over the top.
