    Cook Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

    Sauté Vegetables

    While the quinoa cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 medium red onion (chopped) and sauté for 3-4 minutes until translucent. Then, add 2 cups of mixed bell peppers (chopped) and 1 cup of zucchini (sliced). Cook for another 5-7 minutes until the vegetables are tender.

    Add Spinach and Chickpeas

    Stir in 2 cups of spinach and 1 cup of drained chickpeas to the skillet. Add 2 minced garlic cloves, 1 teaspoon of cumin, and season with salt and black pepper to taste. Cook for an additional 3-4 minutes until the spinach is wilted and everything is heated through.

    In a large bowl, combine the cooked quinoa with the sautéed vegetable and chickpea mixture. Toss gently to combine. Garnish with 1 tablespoon of chopped fresh parsley before serving.
