Preparation
1. Cook the Rice
In a medium saucepan, rinse 1 cup of rice under cold water until the water runs clear. Add 2 cups of water and a pinch of salt, then bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked through and water is absorbed. Fluff with a fork and set aside.
2. Prepare the Chicken
Slice the chicken breast into thin strips. In a bowl, combine the chicken strips with 1 tablespoon of soy sauce, 1 tablespoon of olive oil, minced garlic, grated ginger, salt, and black pepper. Let marinate for at least 15 minutes.

3. Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Add the marinated chicken strips and grill for about 5-7 minutes on each side or until fully cooked and golden brown. Remove from heat and set aside.
4. Stir-fry the Vegetables
In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and stir-fry for 2 minutes until they start to soften. Then, add the bell pepper, broccoli florets, and carrots. Stir-fry for another 5-7 minutes or until the vegetables are tender-crisp.
5. Combine Chicken and Vegetables
Add the grilled chicken to the skillet with the vegetables. Pour in the remaining 2 tablespoons of soy sauce and stir well to combine. Cook for an additional 2-3 minutes to heat through.

6. Serve the Dish
