Method

Preparing the Turkey

    Thaw the Turkey

    If using a frozen turkey, allow it to thaw in the refrigerator for 1-2 days before cooking.

    Preheat Oven

    Preheat your oven to 325°F (165°C).

    Prepare the Turkey

    Remove the giblets and neck from the turkey cavity. Rinse the turkey under cold water and pat dry with paper towels.

    Season the Turkey

    Rub the entire turkey with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Place the lemon and fresh sage inside the cavity of the turkey.

Optional Stuffing

    Prepare Stuffing Mixture

    In a skillet, melt butter over medium heat. Add chopped onion and celery, and sauté until softened, about 5 minutes.

    Combine Ingredients

    In a large bowl, combine the sautéed vegetables with bread cubes, chicken broth, dried sage, salt, and black pepper. Mix until well combined.

    Stuff the Turkey

    If desired, loosely fill the turkey cavity with the stuffing mixture.

Roasting the Turkey

    Prepare for Roasting

    Place the turkey breast side up on a rack in a roasting pan. Tie the legs together with kitchen twine.

    Roast the Turkey

    Roast the turkey in the preheated oven for about 13 minutes per pound, or until the internal temperature reaches 165°F (75°C). Baste the turkey with pan juices every 30 minutes.

    Rest the Turkey

    Once cooked, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
