Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water (about 110°F or 43°C) and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it is frothy.

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the olive oil and the activated yeast mixture. Stir until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until it is smooth and elastic. Place it in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Filling Preparation

    Prepare the Filling

    While the dough is rising, prepare the filling. In a mixing bowl, combine the pizza sauce, diced tomatoes, diced onions, sliced mushrooms, sliced black olives, and diced green peppers. Mix until well combined.

Assembling the Calzone

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Roll Out the Dough

    Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a circle about 10 inches in diameter.

    Fill the Calzone

    On one half of each dough circle, spread a layer of pizza sauce, then sprinkle a generous amount of mozzarella cheese. Add a portion of the prepared filling mixture over the cheese.

    Seal the Calzone

    Fold the other half of the dough over the filling and press the edges to seal. You can crimp the edges with a fork or twist them to ensure they are tightly closed.

    Bake the Calzone

    Place the calzones on a baking sheet lined with parchment paper. Optional: Brush the tops with a little olive oil and cut a few slits in the top for steam to escape. Bake in the preheated oven for 20-25 minutes or until golden brown.

Serving

    Remove the calzones from the oven and let them cool for a few minutes. Serve hot with extra pizza sauce for dipping.
