Method

Scallops

    Prepare the Scallops

    Rinse the scallops under cold water and pat them dry with paper towels. Season with salt and black pepper.

    Sear the Scallops

    In a skillet, heat the olive oil over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Add scallops and sear for 2-3 minutes on each side until golden brown. Drizzle with lemon juice before serving.

Fries

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips to resemble fries.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry for 4-5 minutes until golden brown and crispy. Remove from oil and drain on paper towels. Season with salt immediately.

Cole Slaw

    Prepare the Vegetables

    Shred the green cabbage and grate the carrot. Place them in a large bowl.

    Make the Dressing

    In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

    Combine and Chill

    Pour the dressing over the shredded cabbage and carrot. Toss well to combine. Cover and refrigerate for at least 30 minutes before serving.

Tartar Sauce

    Mix the Tartar Sauce

    In a small bowl, combine mayonnaise, diced dill pickles, lemon juice, capers, salt, and black pepper. Stir until well blended.

    Chill and Serve

    Cover and refrigerate the tartar sauce for at least 15 minutes to allow flavors to meld.
