Prepare Dough

    Activate Yeast

    In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and olive oil.

    Knead Dough

    Mix until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the kneaded dough in a lightly oiled bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Filling

    Prepare Meats

    While the dough is rising, prepare the meats by cooking the sausage if not already cooked, and slicing the salami, ham, meatballs, and pepperoni.

    Mix Filling

    In a large bowl, combine the pizza sauce, pizza cheese, salami, sausage, ham, meatballs, and pepperoni. Mix well.

Assemble and Bake

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Shape Dough

    Once the dough has risen, punch it down and divide it into 2 equal portions. Roll each portion into a circle, about 12 inches in diameter.

    Fill Calzone

    On one half of each dough circle, place a generous amount of the meat filling, leaving an edge for sealing. Fold the other half over to cover the filling.

    Seal Calzone

    Press the edges together tightly to seal. Use a fork to crimp the edges for a decorative touch.

    Brush and Season

    Brush the top of each calzone with olive oil and sprinkle with grated Parmesan cheese, Italian seasoning, and red pepper flakes to taste.

    Bake

    Place the calzones on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until golden brown.

    Serve

    Remove from the oven and let cool for a few minutes before slicing. Serve hot with additional pizza sauce on the side for dipping.
