Ice Cream Base

Chocolate Coating

Method

Ice Cream Base

  1. 1

    Prepare the Ice Cream Base

In a mixing bowl, combine heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Whisk until the sugar is completely dissolved.

  2. 2

    Chill the Mixture

Cover the bowl and refrigerate the mixture for at least 2 hours or until thoroughly chilled.

  3. 3

    Churn the Ice Cream

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  4. 4

    Incorporate Caramel

Once the ice cream is churned, fold in half of the prepared caramel sauce. Transfer to a container and freeze until firm.

Caramel Sauce

  1. 5

    Make the Caramel

In a saucepan over medium heat, melt the sugar, stirring constantly until it becomes a golden brown liquid.

  2. 6

    Add Butter

Carefully add the butter to the melted sugar and stir until fully combined.

  3. 7

    Incorporate Cream

Slowly pour in the heavy cream while stirring continuously. Be cautious as the mixture will bubble up.

  4. 8

    Finish the Sauce

Once combined, remove from heat and stir in vanilla extract and a pinch of salt. Let cool.

Chocolate Coating

  1. 9

    Melt the Chocolate

In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until fully melted and smooth.

  2. 10

    Prepare for Dipping

Set up a baking sheet lined with parchment paper to place the dipped bars on.

Assembly

  1. 11

    Shape the Bars

Scoop the frozen ice cream into bar shapes and place them on the prepared baking sheet.

  2. 12

    Coat with Chocolate

Dip each ice cream bar into the melted chocolate, ensuring it's fully covered. Allow excess chocolate to drip off.

  3. 13

    Add Optional Toppings

If desired, sprinkle chopped nuts over the chocolate coating while it's still wet.

  4. 14

    Freeze Until Set

Return the coated bars to the freezer for at least 30 minutes to set the chocolate coating.
