Dough Preparation

    Activate Yeast

    In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    On a floured surface, knead the dough for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

    Preheat Oven

    Preheat your oven to 475°F (245°C) during the last 15 minutes of the dough rising.

Filling Preparation

    Prepare Ingredients

    While the dough is rising, prepare your filling ingredients: cook and crumble the sausage, slice the mushrooms, meatballs, salami, and pepperoni, and dice the ham and green peppers. Finely chop the onion.

    Mix Filling

    In a large bowl, combine the pizza sauce, pizza cheese, cooked sausage, chopped onion, sliced mushrooms, sliced meatballs, diced ham, sliced green peppers, sliced salami, and sliced pepperoni. Mix well.

Calzone Assembly

    Shape Dough

    Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a circle about 10 inches in diameter.

    Fill Calzone

    Place a generous amount of the filling mixture on one half of each dough circle, leaving a border around the edge. Fold the other half over and pinch the edges to seal securely.

    Cut Vent Holes

    Use a sharp knife or kitchen scissors to cut a few small slits in the top of each calzone to allow steam to escape.

Baking

    Bake Calzones

    Transfer the calzones to a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.
