Cut Potatoes
Slice the peeled potatoes into thin strips, approximately 1/4 inch thick. Try to keep them uniform for even cooking.

Soak Potatoes
Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Heat Oil
In a large heavy-bottomed pot or deep fryer, pour in the vegetable oil. Heat the oil to 350°F (175°C). Use a thermometer for accuracy.

Dry Potatoes
After soaking, drain the potato strips and pat them dry with a clean kitchen towel. Removing moisture is key to achieving crispy fries.

Fry Potatoes (First Fry)
Carefully add a batch of potato strips to the hot oil, ensuring not to overcrowd the pot. Fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes or until they are golden brown and crispy. Drain on paper towels again.
