Method
Preparing the Chips
- 1
Cutting the Potatoes
Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.
- 2
Soaking the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
- 3
Drying the Potatoes
Drain the potatoes and pat them dry with paper towels to ensure they are not wet before frying.

Preparing the Fish

Making the Batter
In a mixing bowl, combine 1 cup all-purpose flour, 1 cup cornstarch, 1 tsp baking powder, and 1 tsp salt. Gradually whisk in 1 cup of beer until the batter is smooth.
- 6
Coating the Fish
Dredge each white fish fillet in the remaining all-purpose flour and shake off excess. Then dip the fillet into the beer batter, ensuring it is fully coated.
- 7
Frying the Fish
In the same pot of hot oil (maintain at 350°F or 180°C), fry the battered fish fillets for 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.
