Method

Prepare Pastry Shells

  1. 1

    Make the Dough

In a mixing bowl, combine all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

  2. 2

    Shape the Shells

Preheat your oven to 400°F (200°C). Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut into strips approximately 1 inch wide and 6 inches long. Wrap each strip around a cream horn mold, overlapping slightly. Bake for 15-20 minutes or until golden brown. Allow to cool before removing from the molds.

Prepare Cream Filling

  1. 3

    Whip the Cream

In a chilled mixing bowl, pour in the heavy cream. Whip on medium speed until it begins to thicken. Gradually add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.

Assemble Cream Horns

  1. 4

    Fill the Shells

Using a piping bag, fill each cooled pastry shell with the whipped cream filling.

  2. 5

    Decorate

Drizzle melted chocolate over the filled cream horns and sprinkle with chopped nuts if desired. Let the chocolate set before serving.
