    Marinade the Seafood

    Add the shrimp, scallops, and salmon fillet to the marinade. Make sure each piece is well coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

    Cook the Quinoa

    In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of rinsed quinoa. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let sit for 5 minutes.

    Sauté the Asparagus

    While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the trimmed asparagus and sauté for 5-7 minutes until tender and slightly crispy. Season with salt and pepper to taste.

    Cook the Seafood

    In the same skillet, add the marinated seafood over medium-high heat. Cook the shrimp and scallops for about 3-4 minutes on each side until they are opaque and cooked through. The salmon fillet should be cooked skin-side down for about 5-7 minutes, then flip and cook for an additional 3-4 minutes until flaky.

Serving

    Plate the Dish

    To serve, fluff the quinoa with a fork and place a portion on each plate. Top with sautéed asparagus and arrange the cooked seafood on top. Garnish with extra parsley if desired.
