Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Ingredients

    In a large mixing bowl, whisk together flour and salt. Make a well in the center, then add the yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Pizza Sauce Preparation

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Combine Sauce Ingredients

    Add crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well and let it simmer for 10-15 minutes to thicken slightly.

Calzone Assembly

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Roll Out Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Divide it into two equal portions and roll each into a circle about 10 inches in diameter.

    Add Filling

    On one half of each dough circle, spread a thin layer of pizza sauce. Top with mozzarella, ricotta, and Parmesan cheese, then sprinkle Italian seasoning on top.

    Seal Calzone

    Fold the other half of the dough over the filling to create a half-moon shape. Press the edges together to seal, and use a fork to crimp the edges for an extra seal.

    Bake Calzone

    Transfer the calzones to a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown.

Serving

    Let the calzones cool for a few minutes before serving. Serve with extra pizza sauce on the side for dipping.
