Method
Pasta Preparation
- 1
Cook the Fettucine
Bring a large pot of salted water to a boil. Add the fettucine and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.
- 2
Drain the Pasta
Once cooked, reserve 1 cup of the pasta water and drain the rest using a colander. Do not rinse the pasta, as this will wash away the starch that helps the sauce adhere.
Alfredo Sauce Preparation
- 3
Melt the Butter
In a large saucepan over medium heat, add the unsalted butter. Allow it to melt completely without browning.
- 4
Add Cream and Garlic
Once the butter is melted, pour in the heavy cream and add the minced garlic. Stir well and bring the mixture to a gentle simmer.
- 5
Thicken the Sauce
Let the cream and garlic mixture simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly.
- 6
Incorporate Cheese and Seasonings
Gradually stir in the grated Parmesan cheese, salt, black pepper, and nutmeg. Continue stirring until the cheese is melted and the sauce is smooth and creamy.
- 7
Adjust Consistency
If the sauce is too thick, add some reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
Combine and Serve
- 8
Combine Pasta and Sauce
Add the drained fettucine to the sauce in the saucepan. Toss gently to coat the pasta evenly with the Alfredo sauce.
- 9
Serve
Divide the pasta among serving plates. If desired, garnish with chopped fresh parsley and extra Parmesan cheese. Serve immediately and enjoy!
