Method
Prepare the Dough

Activate Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dough Ingredients
In a large mixing bowl, combine all-purpose flour, salt, and olive oil. Add the activated yeast mixture and stir until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Prepare the Filling

Mix Chicken and Sauce
In a medium bowl, combine shredded chicken with buffalo sauce. Mix until the chicken is well coated.

Prepare Cheese and Sauce
In another bowl, combine the pizza cheese and pizza sauce. Stir until evenly mixed.
Assemble the Calzone

Preheat Oven
Preheat your oven to 475°F (245°C).

Roll Out Dough
Once the dough has risen, punch it down and divide it into 2 equal portions. Roll out each portion into a circle about 10 inches in diameter.

Fill the Calzone
On one half of each dough circle, layer the buffalo chicken mixture and the cheese mixture. If desired, sprinkle with diced green onions and crumbled blue cheese.

Seal the Calzone
Fold the other half of the dough over the filling. Crimp the edges to seal tightly, and make a few slits on top of each calzone for steam to escape.
Bake the Calzone

Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until golden brown.

Cool and Serve
Remove from the oven and let cool for a few minutes before slicing. Serve with extra pizza sauce for dipping.
