    Activate the Yeast

    In a small bowl, combine warm water (3 ml) and sugar (1 tsp). Sprinkle active dry yeast (1 tbs) over the top and let it sit for about 5 minutes until foamy.

    Mix the Dough

    In a large bowl, combine all-purpose flour (2 cups) and salt (1 tsp). Make a well in the center, then add the yeast mixture and olive oil (1 tbs). Stir until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in an oiled bowl, cover with a cloth, and let it rise in a warm area for 1 hour.

Filling Preparation

    Prepare the Filling

    In a medium bowl, combine the shredded chicken (1 cup), buffalo sauce (1 tbs), blue cheese crumbles (1 cup), cream cheese (4 oz), diced celery (1 stalk), and chopped green onions (2 stalks). Mix until well combined.

Calzone Assembly

    Roll Out the Dough

    After the dough has risen, punch it down and transfer it to a floured surface. Divide into two equal parts and roll each part into a large circle about ¼ inch thick.

    On one half of each dough circle, place half of the filling mixture. Be sure to leave a border around the edge to seal the calzone.
