Preparing the Filling

Chop the Walnuts
Finely chop the walnuts using a food processor or a knife. They should be in small pieces but not ground into powder.

Mix the Filling
In a bowl, combine the chopped walnuts, sugar, and ground cinnamon. Mix well to ensure all the ingredients are evenly distributed.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Phyllo Dough
Thaw the phyllo dough if it is frozen. Unroll it and cover it with a damp cloth to prevent it from drying out.

Melt the unsalted butter in a saucepan. Using a pastry brush, coat the bottom and sides of a 9x13 inch baking dish with melted butter.

Spread the walnut filling evenly over the layered phyllo dough.

Add another 8-10 layers of phyllo dough, buttering each layer as before.

Using a sharp knife, cut the baklava into diamond or square shapes before baking.

Bake the baklava in the preheated oven for 45-50 minutes or until it is golden brown.

While the baklava is baking, combine water, granulated sugar, and honey in a saucepan. Bring to a boil, then reduce heat and let it simmer for about 10 minutes.
