    Prepare the Polenta Cake

    In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in 1 cup of polenta, stirring continuously to avoid lumps. Reduce heat to low and cook for about 20 minutes, stirring occasionally, until thickened. Season with salt and pepper. Spread the polenta in a greased baking dish and let it cool, then cut into squares.

    Cook the Salmon

    Heat olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper. Place fillets skin-side down in the skillet and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.

    Sauté the Bitter Greens

    In the same skillet, add minced garlic to the remaining oil and sauté for 1 minute. Add the bitter greens and sauté until wilted, about 3-4 minutes. Drizzle with lemon juice and season with salt and pepper.

    Make the Herbed Butter Sauce

    In a small saucepan, melt the unsalted butter over low heat. Stir in finely chopped fresh herbs and cook for 2-3 minutes. Remove from heat.

    Assemble the Dish

    On a serving plate, place a piece of polenta cake, top with sautéed bitter greens, and then place the salmon fillet on top. Drizzle with herbed butter sauce before serving.
