    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season it generously with salt and black pepper. Place it in a roasting pan skin-side up.

    Roast the Pork Belly

    Roast the pork belly in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy.

    Crisp the Skin

    After roasting, increase the oven temperature to 450°F (230°C) and roast for an additional 20-30 minutes until the skin is crispy.

    Prepare the Greens

    While the pork is roasting, wash and dry the mixed greens. Chop the chives finely.

    Serve

    Once the pork belly is done, let it rest for 10 minutes before slicing. Serve it over a bed of mixed greens, drizzled with General Tso sauce, topped with chives, sesame seeds, and a sprinkle of puffed rice.
