Fried Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels. This will help ensure they fry up crispy.

    Make the Breading

    In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well to combine.

    Heat the Oil

    In a large, deep frying pan or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture, shaking off the excess. This coating will create a crispy exterior once fried.

    Fry the Calamari

    Fry the coated calamari in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    In a small bowl, whisk together mayonnaise, minced garlic, lemon zest, and lemon juice. Adjust the seasoning with salt and pepper to taste.

    Plate the fried calamari and garnish with chopped parsley. Serve alongside artichoke hearts, sliced black olives, pepperoncini, and the lemon aioli for dipping.
