Make the Pasta Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Cheese Filling
In a mixing bowl, combine ricotta, mozzarella, parmesan, gorgonzola, black pepper, and salt. Mix until smooth and well combined.

Roll Out the Dough
After resting, divide the dough into 4 pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin, ensuring they are thin but not tearing.

Fill the Ravioli
Place a tablespoon of the cheese mixture on one sheet of pasta, spacing them about 2 inches apart. Brush the edges with the egg wash, then place another sheet of pasta on top and press down to seal, ensuring there are no air pockets.

Using a knife or ravioli cutter, cut out the individual ravioli and set them aside on a floured surface.

Heat oil in a large skillet over medium heat. Once hot, prepare for frying the ravioli.

Fry the ravioli in batches, about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
