Method

Preparing the Raisin Concassé

    Soak the Raisins

    In a small saucepan, combine the raisins and water. Bring to a simmer over medium heat, and let them soak for about 10 minutes until they are plump. Remove from heat and allow to cool.

    Chop the Raisins

    Once cooled, drain the raisins and chop them finely to create a concassé. Set aside.

Making Basil Oil

    Blend the Ingredients

    In a blender, combine the fresh basil leaves, olive oil, and salt. Blend on high speed until the mixture is smooth and the basil is fully incorporated.

    Strain the Basil Oil

    Using a fine mesh strainer or cheesecloth, strain the basil oil into a bowl or jar to remove any solid bits. Set aside.

Assembling the Dish

    Plate the Burrata

    Place the burrata cheese in the center of a serving plate.

    Add Raisin Concassé

    Spoon the raisin concassé generously over the burrata cheese.
