    Prepare the Short Ribs

    Preheat the oven to 300°F (150°C). Season the short ribs with salt and black pepper. Heat olive oil in a large oven-safe pot over medium-high heat. Sear the short ribs on all sides until browned. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add diced onions and minced garlic. Sauté until the onions are translucent. Add sliced mushrooms and fresh thyme, cooking until the mushrooms are tender.

    Slow Roast the Short Ribs

    Return the short ribs to the pot and add beef broth. Bring to a simmer, cover, and transfer to the preheated oven. Roast for about 3 hours, or until the meat is tender and falling off the bone.

    Cook the Freekeh Risotto

    In a separate pot, cook freekeh according to package instructions, usually about 20-25 minutes. Stir in the sultana raisins during the last 5 minutes of cooking.

    Serve

    Once the short ribs are cooked, remove them from the pot and let them rest for a few minutes. Serve over a bed of freekeh risotto, garnished with pomegranate seeds and toasted pine nuts. Drizzle with the beef jus from the pot.
