Prepare the Lentils
Rinse the green lentils under cold water until the water runs clear. In a pot, add the lentils and cover with water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender. Drain and set aside.
Make the Tamarind Sauce
In a small bowl, mix the tamarind paste with a little warm water to loosen it. Add minced garlic and stir until well combined. Set aside.
Prepare Bread Dumplings
Steam or boil the bread dumplings according to package instructions. Once cooked, cut them into bite-sized pieces.
Combine Ingredients
In a large bowl, mix the cooked lentils, bread dumpling pieces, fresh cilantro, and tamarind sauce. Toss gently to combine.
Serve
Plate the lentil mixture and top with crispy onions, crunchy bread pops, and pomegranate seeds for garnish. Serve immediately.
