Preparation and Cooking

Marinate the Chicken
In a large bowl, combine yogurt, lemon juice, minced garlic, olive oil, paprika, cumin, salt, and black pepper. Add the chicken pieces and mix until well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Rice
In a saucepan, bring 2 cups of water to a boil. Add the rice and saffron threads, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.

Skewer the Chicken and Vegetables
Preheat the grill to medium-high heat. Thread the marinated chicken and assorted vegetables onto skewers, alternating between chicken and vegetables.

Prepare the Sauce
In a small bowl, mix yogurt with Aleppo chili flakes. Set aside.

Serve
Serve the chicken skewers over saffron rice, topped with pomegranate seeds. Serve with toasted lavash bread and drizzle the Aleppo chili yogurt sauce over the skewers.
