    Prepare the Tahini Sauce

    In a bowl, whisk together tahini, lemon juice, minced garlic, salt, and water until smooth. Adjust seasoning to taste and set aside.

    Prepare the Asparagus

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the trimmed asparagus and season with salt and pepper. Grill for about 5-7 minutes until tender and slightly charred. Remove from heat and set aside.

    Cook the Salmon

    Season the salmon fillets with za'atar, salt, and pepper. In a separate skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Add the salmon fillets and sear for about 4-5 minutes on each side or until cooked through and golden brown.

    Fry the Leeks

    In the same skillet, add a little more oil if necessary, and fry the leeks until crispy. Drain on paper towels and set aside.

    Plate the Dish

    On each plate, arrange the grilled asparagus, place the seared salmon on top, drizzle with tahini sauce, and garnish with crispy leeks and dried rose petals.
