Prepare the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they are caramelized, about 10-15 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

Cook the Chicken
Push the onions to one side of the skillet and add the chicken thighs. Season with sumac, salt, and pepper. Add the cinnamon stick and pour in the chicken broth. Cover and let cook for about 20 minutes, or until the chicken is cooked through and tender.

Assemble the Rolls
Take a piece of saj bread, add a generous amount of the chicken and onion mixture, and roll it up. Repeat with the remaining bread and filling.
