    Prepare the Za’atar Roasted Potatoes

    Preheat the oven to 400°F (200°C). Toss the cubed potatoes with olive oil, za’atar spice mix, salt, and black pepper. Spread them on a baking sheet and roast for 25-30 minutes or until golden brown and crispy.

    Cook the Filet Mignon

    While the potatoes are roasting, prepare the Mediterranean herb butter by mixing unsalted butter, chopped basil, parsley, oregano, minced garlic, salt, and black pepper in a bowl. Heat a skillet over medium-high heat and sear the filet mignon for about 4-5 minutes on each side for medium-rare. Top the steak with the herb butter and let it melt.

    Sauté the Mushrooms

    In the same skillet, add sliced mushrooms and a little olive oil if needed. Sauté for about 5-7 minutes until soft and golden. Season with salt and black pepper.

    Assemble the Plate

    On a serving plate, place the filet mignon, sautéed mushrooms, and roasted potatoes. Garnish with slices of vine-ripened tomato and serve immediately.
