Preparation and Cooking

    Prepare the Kofta Skewers

    In a large bowl, combine ground lamb, chopped onion, parsley, Aleppo pepper, salt, black pepper, and cumin. Mix well until all ingredients are evenly incorporated. Form the mixture into elongated shapes around skewers.

    Grill the Skewers

    Preheat the grill to medium-high heat. Grill the kofta skewers for about 10-12 minutes, turning occasionally until cooked through and slightly charred.

    Prepare the Grilled Vegetables

    Toss bell peppers and zucchini with olive oil, salt, and pepper. Grill alongside the kofta skewers until tender and slightly charred, about 5-7 minutes.

    Make the Cacik Sauce

    In a bowl, mix grated cucumber, yogurt, minced garlic, and a pinch of salt. Stir well and refrigerate until serving.

    Prepare the Saffron Rice

    In a pot, bring 2 cups of water to a boil. Add rice, saffron, and salt. Cover and reduce heat to low, cooking for 15-20 minutes until rice is tender.

    Toast the Lavash Bread

    Brush lavash bread with olive oil and sprinkle with ground cinnamon, cumin, and salt. Toast on the grill or in a pan until golden.

    Plate the kofta skewers with grilled vegetables, saffron rice, a side of yogurt cucumber sauce, garnished with pomegranate seeds, and toasted lavash bread.
